Cuisinart SM-55 5-1/2-Quart Stand Mixers



I've been using this mixer for 16 months and don't need to repeat the positive comments from other reviewers. But for cake bakers, it has a few capacity limits that were hard for me to figure out before buying. The "quart capacity" thing is hard to translate into cake recipes. So, this review is for people curious about cake baking capacity.

For cake batter, it can handle all the batter at once for up to a 10 x 2 inch, 2-layer cake made from scratch. For larger cakes, you'll need to mix one layer at a time and max capacity is enough for ONE 14 x 2 1/2 layer. For real buttercream frosting it can handle a max of 18 large egg whites (plus all the butter) which is enough to frost a 2-layer, 14-inch round cake and some basic piping.
